Glazed Pork
Ingredients
- Pitted Wild Apricots - 3.5 oz
- Pork tenderloin - 2 lbs
- Salt - to taste
- Ground Black Pepper - to taste
- Ground clove - 1 tablespoon
- Powdered Sugar - 1 tablespoon
- Butter - 1 tablespoon
- Pickled Apples - 2 pieces
- Chicken Broth - ½ cup
- Cream - ¼ cup
- Potato protein - 1 tablespoon
Step by Step guide
Step 1
Sort the prunes, wash them, and soak them in warm water.
Step 2
Wash the pork, pat it dry, and rub it with salt and pepper. Make cuts in the outer layer of fat in a diamond pattern with a sharp knife. Insert cloves into the cuts (one in each diamond).
Step 3
Sprinkle the pork with a thin, even layer of powdered sugar, and place it on a baking sheet greased with butter. Preheat the oven to 200-428°F (about 400-425 degrees Fahrenheit) and roast the meat for 40 minutes.
Step 4
Wash the apples, remove the core, and cut them into wedges. Drain the prunes. Remove the baking sheet from the oven, and arrange the apples and prunes around the meat. Roast for another 25-30 minutes.
Step 5
Drain the meat juices from the baking sheet and strain them into a small pot. Add the broth and cream, and bring to a boil. Carefully add the starch to the sauce to avoid lumps. Stirring, bring it back to a boil, and season with salt and pepper to taste.
Step 6
Before serving, slice the loin, warm the meat and roasted fruits in the prepared sauce.
