Glazed Pork with Fried Apples, Potatoes, and Red Onion
Ingredients
- Caramel Syrup - 1 cup
- Orange juice concentrate - ½ cup
- Balsamic Vinegar - ¼ cup
- Apple - 2 pieces
- Sweet Potato - 17.6 oz
- Potato - 3 pieces
- Spanish onions - 1 head
- Olive Oil - 3 tablespoons
- Pork Skewers - 42.3 oz
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
In a bowl, mix grape syrup, orange juice, balsamic vinegar, salt, and pepper.
Step 2
Preheat the oven to 230°F. In a skillet, heat a small amount of olive oil and sear the pork ribs on the meat side, then place them on a baking tray bone side down. Brush the ribs with the glaze and cook for approximately 2 hours.
Step 3
During cooking, add glaze every 20 minutes. The dish should cook very slowly at low temperature to ensure the meat becomes tender, soft, and well-coated with glaze.
Step 4
Pre-cook the potatoes and sweet potatoes. Then form balls from the potatoes, sweet potatoes, and peeled apples. When the ribs are almost ready, separately fry the balls made from potatoes, sweet potatoes, apples, and sliced red onion.
Step 5
When the pork is ready, remove the ribs from the oven, place them in a bowl, and keep them on the open oven door to prevent cooling. Collect the roasting juices from the tray using a wooden spatula, pouring half a cup of boiling water onto the tray first. Strain all the liquid remaining from roasting through a fine sieve and keep it in a small pot. Let it sit and remove the fat before serving.
Step 6
Place the ribs on a sauté of potato and apple balls. Add a tablespoon of the meat roasting sauce and serve.
