Ingredients
- Nutmeg - to taste
- Dry White Wine - 4 fl oz
- Wheat Flour - 1 tablespoon
- Olive Oil - 1 tablespoon
- Salt - to taste
- Egg white - 4 pieces
- Parmesan Cheese - 1.8 oz
- Butter - 4.4 oz
- Milk - 2 qt
- Semolina - 10.6 oz
Step by Step guide
Step 1
Heat the milk almost to boiling. Gradually add the semolina and cook, stirring constantly, for 5 minutes. Stir in the butter and grated cheese. Remove the pot from the heat and mix in the egg yolks one at a time. Season with salt and let cool.
Step 2
Divide the remaining mixture into balls the size of a walnut. Place them in a baking dish. Preheat the grill.
Step 3
Make the sauce: melt the butter with the olive oil in a saucepan, stir in the flour and cook, stirring, for 2 minutes. Slowly, while stirring constantly, pour in the milk and wine, season with salt and sprinkle with freshly grated nutmeg. Cook over low heat, stirring, for 10 minutes.
Step 4
Pour the sauce over the gnocchi and place them under the grill. Serve hot.
