Description

Making vegan gnocchi is incredibly simple: in nine out of ten cases, Italians only add mashed potatoes, flour, and salt. If you replace wheat flour with rice flour, the gnocchi will not only be vegan but also gluten-free. The challenge lies in preparing a tasty vegan sauce because gnocchi pair best with cream and rarely go without Parmesan and other Italian cheeses. Chef John manages to achieve great results with minimal ingredients; his recipe is a paraphrase of the classic spaghetti aglio e olio, which contains just three ingredients: olive oil, freshly ground pepper, and garlic. The trick is to first fry the gnocchi until they have a light golden crust (something Italians usually skip), and then coat them in a velvety emulsion sauce in the same pan (the creamy effect without cream is achieved using dehydrated nutritional yeast). Finally, generously sprinkle the gnocchi with fresh basil and serve. This recipe was shared with us by Chef John from the popular American eatery, The Rustic Table.

Ingredients

  • Salad Potatoes - 11.5 oz
  • Wheat Flour - 8.8 oz
  • Vegetable Oil - 0 fl oz
  • Mild Chili Spice - 1.8 oz
  • Garlic - 0.4 oz
  • Olive Oil - 1 fl oz
  • Basil - 0.2 oz
  • Salt - to taste
  • Cheese yeast - 0.2 oz

Step by Step guide

Step 1

Prepare the gnocchi. Pass the boiled potatoes through a fine sieve.

Step 2

Combine the potatoes with the flour and salt (10 g) and knead until a smooth dough forms.

Step 3

Let the dough rest for 30 minutes.

Step 4

Divide the dough into small pieces and roll them into sausage shapes with a diameter of 7–8 mm.

Step 5

On a floured surface, cut the sausages into gnocchi, with each piece measuring about 1.5 cm in length.

Step 6

Place the gnocchi on a baking sheet and freeze.

Step 7

Before serving, thinly slice the garlic.

Step 8

Slice the hot pepper into thin rings.

Step 9

Place the gnocchi in a skillet with heated vegetable oil, garlic, and chili pepper, and sauté until golden brown.

Step 10

Pour a little water into the skillet and cook the gnocchi until they are ready, about one minute.

Step 11

Add a little olive oil, salt, and nutritional yeast to the skillet. It's important that the water, oil, and yeast combine to form an emulsion, so be sure to stir the contents of the skillet vigorously and adjust the amount of water as needed.

Step 12

Arrange the gnocchi on a plate, drizzle with the sauce, and garnish with fresh basil.
