- 50% Fat 'Lambert' Cheese - 7.1 oz
- Semolina - 3.5 oz
- Marinated cherries - 7.1 oz
- Chocolate eggs - 2 pieces
- Arugula - 1.8 oz
- Garlic - 1 clove
- Olive Oil - 1 fl oz
- Thyme - 3 sprigs
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Chop the arugula in a mortar with garlic and a pinch of salt, mix with olive oil.
Step 2
Grate the "Lambert" cheese, mix with semolina and eggs.
Step 3
Knead the dough, roll into a log, and cut into 2-centimeter thick slices. Shape into dumplings by hand and boil in salted water, then drain in a colander.
Step 4
Heat a pan and sauté the tomatoes in vegetable oil, add the dumplings, warm through, and remove from heat.
Step 5
Place the dumplings with tomatoes on a plate, drizzle with arugula dressing, and sprinkle with fresh thyme.
