Ingredients

  • 33% Cream - 4 fl oz
  • Butter - 4.9 oz
  • Grated Pecorino Pepato Cheese - 3.5 oz
  • Salad Potatoes - 21.2 oz
  • Potato protein - 0.7 oz
  • Wheat Flour - 2.1 oz
  • Whole egg - 1 piece
  • Salt - to taste
  • Tiger shrimp in brine - 7.1 oz
  • Brussels Sprouts - 1.8 oz
  • Asparagus - 2.1 oz
  • Olive Oil - to taste

Step by Step guide

Step 1

First, prepare the beurre monté sauce with Parmesan: heat the cream over medium heat, gradually adding the butter in cubes while constantly whisking.

Step 2

Add 30 grams of Parmesan to the hot mixture and season with salt to taste. The sauce is ready.

Step 3

Boil the potatoes in their skins until cooked.

Step 4

Carefully peel the hot potatoes and pass them through a sieve until smooth.

Step 5

Add the yolk, flour, starch, remaining cheese, and salt.

Step 6

Mix until homogeneous.

Step 7

On a floured surface, roll out the dough into logs, cut them into pieces, and roll each piece over a gnocchi board.

Step 8

Before serving, cook the gnocchi in boiling salted water.

Step 9

Once all the gnocchi float to the surface, remove them from the water and transfer to a saucepan with the beurre monté sauce, set aside for 5 minutes.

Step 10

Blanch the asparagus in salted water for 10 seconds.

Step 11

Then, blanch the Brussels sprout leaves in the same water; they will need a bit more time to cook but should remain slightly crunchy.

Step 12

In a heated skillet with vegetable oil, add the shrimp, seasoning them with salt. Sauté until cooked.

Step 13

At the end of cooking, add the Brussels sprouts and asparagus to the shrimp and sauté briefly.

Step 14

Warm the gnocchi in the beurre monté sauce, seasoning with salt to taste.

Step 15

Plate the dish, garnishing with shrimp, asparagus, and Brussels sprouts. Drizzle lightly with vegetable oil, and feel free to add your favorite herbs before serving immediately.
