Ingredients
- Salad Potatoes - 2 lbs
- Chocolate eggs - 2 pieces
- Salt - to taste
- Wheat Flour - 14.1 oz
- Parmesan Cheese - 2.5 oz
- Onion - 7.1 oz
- Thyme - 0.1 oz
- Chicken Broth - 2 qt
- Apple Wine - 2 fl oz
- Soy Sauce - 0 fl oz
- Dried Chinese mushrooms - 5.3 oz
- Kombu Seaweed - 0.5 oz
- Butter - 17.6 oz
- Dried Squid - 4.2 oz
- Morels - 4.2 oz
- Olive Oil - to taste
Step by Step guide
Step 1
Bake the potatoes in coals, mix the potato flesh with the egg, cheese, and flour. Soak the peels in water overnight.
Step 2
Season with salt to taste.
Step 3
Shape the hot mixture into a long sausage, cut it, and place it in the freezer.
Step 4
Next, prepare the mushroom broth. Chop the onion and mushrooms randomly. Pour in the vegetable broth and wine.
Step 5
Add soy sauce, thyme, and kombu.
Step 6
Put on the heat, bring to a boil, and remove from heat.
Step 7
Prepare the mushroom emulsion. Blend 500 grams of mushroom broth with 500 grams of butter to create an emulsion.
Step 8
Thoroughly rinse the potato peels. Pour boiling water over them and let sit for 2 minutes.
Step 9
Drain in a sieve and dry.
Step 10
Fry in a pan. The chips are ready.
Step 11
Sauté the gnocchi in a pan with garlic oil.
Step 12
Next, sauté the wild mushrooms.
Step 13
Add the emulsion and parsley, season with salt and pepper to taste.
Step 14
On a plate, arrange the gnocchi, potato chips, and dried duck.
