- Potato - 7.1 oz
- Durum wheat - 0.6 oz
- Nutmeg - 0.1 oz
- Garlic - 0.9 oz
- Olive Oil - 0 fl oz
- Herbs - 0.3 oz
- Spices - 0 oz
- Wheat Flour - 1.8 oz
- Chicken Egg - ½ piece
- Parmesan Cheese - 0.4 oz
- Salt - 0.1 oz
- Chicken Broth - 1 fl oz
- Fresh Mushrooms - 16.2 oz
- 33% Cream - 3 fl oz
Step by Step guide
Step 1
Boil the potatoes in their skins, peel, and mash.
Step 2
Add flour, parmesan, chicken egg, salt (3 grams), and a bit of nutmeg to the mashed potatoes.
Step 3
Shape the resulting mixture into sausages of desired size.
Step 4
If you want to freeze them for later, coat them in durum wheat flour. If not, skip this step. Cook for 3–4 minutes, then transfer to a skillet with the prepared mushrooms.
Step 5
Use a mix of honey mushrooms, butter mushrooms, and aspen mushrooms. Sauté them with garlic and parsley. Plus, add the meat broth.
Step 6
Then add the 33% cream (we tried 39% cream — it was too rich). Add salt (1 gram) and pepper.
Step 7
Finally, sprinkle parmesan over the gnocchi and simmer them briefly, stirring constantly.
