- Panko breadcrumbs - 7.1 oz
- Large eggs - 2 pieces
- Olive Oil - 2 tablespoons
- Grated Pecorino Pepato Cheese - 2.1 oz
- Cayenne Pepper - a pinch
- Chicken fillet - 2 lbs
- Apricot Jam - 1 cup
- Dijon Mustard - ¼ cup
- Chopped Sage Leaves - 1 teaspoon
Step by Step guide
Step 1
Preheat the oven to 374°F. Line a baking sheet with parchment paper and grease it with vegetable oil.
Step 2
In a bowl, mix the flour, salt, and pepper. In another bowl, whisk the eggs with 2 tablespoons of water. In a third bowl, place the breadcrumbs, drizzling them with olive oil. Mix in the parmesan and cayenne pepper.
Step 3
Cut the chicken breasts into small cubes. First, coat them in flour, then in egg, and finally in breadcrumbs. Place on the baking sheet and bake until golden and cooked through for 18–20 minutes.

In a small bowl, mix the apricot jam, mustard, and thyme.
