Ingredients
- Buttermilk - 1 cup
- Wheat Flour - 0.3 cups
- Skin-On Chicken Breasts - 4 pieces
- Crackers - 1.8 oz
- Ground Black Pepper - ½ teaspoon
- Butter - 2 tablespoons
- Green Papaya - 3 lbs
- Carrot - 8.8 oz
- Mayonnaise - 3 tablespoons
- Sugar - 1½ teaspoons
- Celery salt - ½ teaspoon
- Apple Cider Vinegar - 1½ teaspoons
- Salt - to taste
Step by Step guide
Step 1
For the coleslaw, in a large bowl, mix finely shredded cabbage, grated carrot, mayonnaise, sugar, celery seeds, vinegar, and a couple of pinches of salt. Mix well, cover with plastic wrap, and refrigerate.
Step 2
Preheat the oven to 428°F.
Step 3
In a bowl, combine the chicken and buttermilk. Season with salt and pepper.
Step 4
In another bowl, mix the flour and crushed crackers. Dredge each piece of chicken in the flour mixture one at a time.
Step 5
Melt the butter in a skillet. Place the chicken pieces, meat side down, and fry for 4 minutes until golden brown. Flip the pieces and transfer to the oven for about 30–35 minutes until cooked through.
Step 6
Serve with the salad.
