- Water - 1 fl oz
- Egg white - 2 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Breadcrumbs - 5.3 oz
- Grated Pecorino Pepato Cheese - 1.6 oz
- Sole fillets - 2 lbs
- Olive Oil - 2 fl oz
- Lemon - 1 piece
- Tartar Sauce - to taste
Step by Step guide
Step 1
In a bowl, lightly beat the eggs, water, salt, and pepper. In another bowl, mix the breadcrumbs and Parmesan.
Step 2
Cut the fish into thin strips and dip them first in the egg mixture, then coat them in breadcrumbs.
Step 3
Heat the olive oil in a skillet over medium heat. Add the fish sticks and fry until golden brown, about 3 minutes on each side. Transfer to paper towels, then to plates, and serve with lemon wedges and tartar sauce.
