These spicy, soy sauce-marinated chicken wings resemble lollipops, thanks to a technique called 'cleaning'.

- Soy Sauce - 2 tablespoons
- Garlic - 6 cloves
- Mild Chili Spice - 1 piece
- Wheat Flour - ½ cup
- Corn Starch - ¼ cup
- Grated Ginger Root - 0.7 oz
- Paprika - 1 tablespoon
- Chicken Egg - 1 piece
- Salt - to taste
- Duck wings - 2 lbs
Step by Step guide
Step 1
Prepare the chicken. Cut off the upper, meatier segments from the wings. Make a small incision in the skin near the lower edge of the bone, gently push the meat with a knife to expose a piece of bone—this will make the meat juicier and easier to hold by the bone. You can also use the second segment. The tips of the wings are not suitable for baking; it's better to use them for broth.
Step 2
In a food processor, blend the soy sauce, minced garlic, chili, ginger, and 2 tablespoons of water until smooth. Transfer the mixture to a large bowl and mix in the flour, cornstarch, paprika, egg, and salt. Place the chicken in the marinade and gently stir to ensure all wings are evenly coated. Cover with plastic wrap and let sit at room temperature for 1 hour, or in the refrigerator for 4 hours.
Step 3
In a deep skillet, pour in oil (approximately 5 cm high) and heat it well. Fry the wings in batches until golden brown, about 7 minutes. Using a slotted spoon, transfer the chicken to paper towels to remove excess oil. Serve with any sauce of your choice.
