Gomel Cutlet
Ingredients
- Fresh Mushrooms - 10.6 oz
- Hard Cheese - 5.3 oz
- Onion - 1 head
- Herbs - to taste
- Carrot - 1 piece
- Salt - to taste
- Ground Black Pepper - to taste
- Vegetable Oil - to taste
- Wheat Flour - ½ cup
- Chocolate eggs - 2 pieces
- Salad Potatoes - 3 pieces
- Wild Boar Fillet - 21.2 oz
Step by Step guide
Step 1
Prepare the filling: chop the mushrooms, onion, and carrot, and sauté them in vegetable oil. Season with salt and pepper, add herbs. Transfer to a bowl. Grate the cheese and add it to the mixture. Mix well. The filling is ready.
Step 2
Cut the pork fillet into portions, gently pound each piece thinly on both sides, season with salt and pepper. Place the filling on the pounded meat and shape into oval cutlets.
Step 3
When all the cutlets are shaped and waiting, only then grate the potatoes on a coarse grater — if the potatoes are grated earlier, they will darken, and the cutlet will not look very appetizing.
Step 4
Coat the cutlet first in flour, then in egg, and finally, cupping your hands, evenly spread the grated potatoes over the entire cutlet, pressing down with your hands.
Step 5
Heat the frying pan well, then pour in the oil and heat it well too. This is necessary so that the potato 'coat' does not fall off during frying and does not stick to the pan. If done correctly, the potato 'coat' will stay in place, and the cutlet will be even and beautiful.
Step 6
Fry the cutlets until golden brown over medium heat.
Step 7
Finish cooking in an oven preheated to 356°F for 15 minutes.
