Ingredients
- Goose fat - 6 lbs
- Pickled Apples - 2 lbs
- Lingonberry - 11.3 oz
- Prunes - 4.6 oz
- Sour Cream - 2 tablespoons
- Honey - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
- Garlic - to taste
- Black Pomegranate Molasses - 1 qt
Step by Step guide
Step 1
Wash the goose, rub it with mustard, and soak it in pomegranate juice. Add a couple of bay leaves (crush them in your hand to release the aroma), some whole black pepper, and garlic. Leave the goose overnight. The goose should be fully submerged in the marinade. For this, I add water.
Step 2
Then dry the goose with a paper towel and rub it with garlic, salt, and pepper both inside and out. Let it rest for at least 2 hours.
Step 3
Cut the apples into quarters and mix them with the lingonberries and chopped prunes.
Step 4
Stuff the goose and sew it up with thread.
Step 5
Mix the sour cream, honey, and garlic.
Step 6
Brush the goose with the resulting mixture.
Step 7
Roast the goose at 356°F for about 3 to 3.5 hours.
