Ingredients
- Goose fat - 9 lbs
- Onion - 2 pieces
- Bay leaf - 1 piece
- Celery salt - 1 piece
- Parsley - to taste
- Oranges - 1 piece
- Butter - 1.8 oz
- Sage - 1 tablespoon
- Breadcrumbs - 0.9 oz
- Hazelnut - 1.8 oz
- Apple - 6 pieces
- Wheat Flour - 2 tablespoons
- Fruit Jelly - 1 tablespoon
- Port Wine - 3 fl oz
Step by Step guide
Step 1
In a pot of water, add the giblets and bring to a boil, skimming off the foam. Add a coarsely chopped onion, celery, bay leaf, parsley, and orange zest. Cook for one and a half hours, then cool.
Step 2
Preheat the oven to 374°F. Prick the goose breast with a fork, place the bird in a baking dish, cover with foil, and roast for about an hour. Then remove the foil and baste with juices, draining excess fat. Cover the goose with foil and roast for another 45 minutes.
Step 3
In a saucepan, melt half of the butter, sauté the onion, add chopped parsley, sage, breadcrumbs, and finely chopped hazelnuts. Core the apples, make a cut around the circumference, and fill them with the prepared stuffing. Top with pieces of the remaining butter.
Step 4
Brush the goose with fat, draining the excess. Place the apples in the dish. Cover only the legs with foil and roast for another 45 minutes. Then remove the apples and keep them warm.
Step 5
Drain almost all the fat, leaving about a tablespoon in the dish. Add the flour and place the dish on the stove. Pour in 600 ml of broth from the giblets, port wine, and orange juice, and mix. When the gravy boils and thickens, add the jelly and cook for another 5 minutes.
