Ingredients
- Chicken Broth - 1 qt
- Goose fat - 4 lbs
- Fat - 1.4 oz
- Sauerkraut - 3 lbs
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Salt the prepared goose and let it rest for 1 hour. Boil the sauerkraut for 10 minutes, drain in a colander, and let it drain well. Place the cabbage in a pot, add the fat, and pour in the meat broth so that it covers the cabbage. Cook on low heat. If the cabbage starts to evaporate too much, occasionally add water.
Step 2
Place the goose in a deep roasting pan, pour in 100 ml of water, put it in a preheated oven, and roast. Arrange the cabbage in the roasting pan and continue roasting in the oven until the goose is cooked, but do not dry it out.
Step 3
Serve the cabbage on a platter, topped with the goose cut into pieces. Serve hot.
