Gougères with Ham and Cheese

Ingredients

  • Butter - 4.4 oz
  • Wheat Flour - 4.8 oz
  • Milk - 10 fl oz
  • Grated Pecorino Pepato Cheese - 7.9 oz
  • Canned Pineapple Chunks - 14.1 oz
  • Cooked Ham - 7.9 oz
  • Farm fresh eggs - 3 pieces
  • Salt - a pinch
  • Ground Black Pepper - to taste
  • Parsley - 0.7 oz

Step by Step guide

Step 1

Filling: Melt 40 g of butter and mix with 40 g of flour, sauté the mixture for about 30 seconds. Remove from heat and gradually add the milk, whisking the mixture thoroughly.

Step 2

Return the mixture to the heat and gradually bring to a boil until it becomes thick and smooth. Remove from heat. Add 175 g of grated hard cheese, parsley, salt, and pepper to taste. Dice the canned pineapple and ham into small cubes and combine with the mixture.

Step 3

Dough: Place 75 g of butter in a saucepan and add 215 ml of water. Gradually heat until the butter melts, then bring to a boil. Add the remaining flour and a pinch of salt. Remove from heat and whisk until the dough starts to pull away from the sides, then slightly cool and add the beaten eggs, mixing well. After that, add the remaining cheese to the dough and mix.

Step 4

Preheat the oven to 392°F. Grease a baking dish (25–30 cm). Spread the dough along the sides of the dish, and place the filling in the center. Bake in the oven for about 50 minutes. The dough should rise and acquire a golden color.
