Gravy for Cabbage Rolls without Sour Cream and Garlic
Ingredients
- Onion - 1 head
- Tomatoes - 7 pieces
- Carrot - 1 piece
- Vegetable Oil - 3 tablespoons
- Green peppercorns - 7 pieces
- Allspice berries - 5 pieces
- Bay leaf - 3 pieces
- Salt - to taste
Step by Step guide
Step 1
Chop the onion medium or large, grate the carrot on a coarse grater, slice 3 tomatoes without skins into rounds, and blend 4 tomatoes with skins (including the skins from the 3 peeled tomatoes).
Step 2
Heat a bit more oil than needed for sautéing in a pan. Add the onion and sauté under a lid until translucent, then add spices (any pepper mixtures, 3 bay leaves), sauté the onion with the spices for 1 minute, then add the grated carrot, followed by the diced tomatoes (3 pieces without skins). When the tomatoes soften, add the blended tomatoes (4 tomatoes with skins, possibly including the skins from the previous 3 pieces, blended to a juice consistency), and season this mixture generously with salt. Add ground pepper (this time, not whole). Bring to a boil over low or medium heat, reduce the heat to the minimum, and simmer the gravy for another 5 minutes.
Step 3
Pour over the cabbage rolls and simmer them for 40 minutes to 1.5 hours, placing cabbage leaves on the bottom of the saucepan (they will burn a little).
