Ingredients
- Fresh Yellow Bell Pepper - 1 piece
- Cucumber - 1 piece
- Cherry Tomatoes - 4 pieces
- Pitted olives - 4 pieces
- Feta cheese - 1.8 oz
- Extra virgin olive oil - 1 tablespoon
- Lemon Juice - ½ tablespoon
- Dried Oregano - ¼ teaspoon
- Garlic - 1 clove
- Salt - to taste
Step by Step guide
Step 1
Cut the bell pepper in half lengthwise, remove the seeds and membranes. Cut each half into quarters.
Step 2
Slice the cucumber into rounds, halve the tomatoes, cube the feta cheese, and mince the garlic.
Step 3
Mix the oil, lemon juice, oregano, garlic, and salt.
Step 4
On the skewers, thread a cucumber round, a tomato half cut side up, then the feta cheese and an olive. Insert the skewers into the pepper boats.
Step 5
Place the boats on a large plate and drizzle with the dressing.
