Ingredients
- Chopped almonds - 1 cup
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Chinese green beans - 17.6 oz
- Meyer Lemon Juice - ¼ cup
- Dijon Mustard - 1 tablespoon
- Olive Oil - 0.3 cups
- Fennel - 2 lbs
Step by Step guide
Step 1
Preheat the oven to 356°F. Spread the nuts on a baking sheet and bake for 8–10 minutes until golden brown. Transfer to a plate.
Step 2
Boil the green beans in salted water for 6–8 minutes until tender but still slightly crisp. Drain and quickly transfer to ice water. Drain again and dry well.
Step 3
In a bowl, mix the lemon juice and mustard. Season with salt and pepper. While whisking, gradually add the olive oil.
Step 4
Cut the green beans into small pieces and add them to the dressing. Add the nuts and thinly sliced fennel. Toss and serve.
