- Parsley - 0.7 oz
- Chinese green beans - 14.1 oz
- Spanish onions - 1 head
- Thyme - 3 pieces
- Porcini Mushrooms - 10.6 oz
- Olive Oil - 5 fl oz
- Champagne Vinegar - 1 fl oz
- Garlic - 1 clove
- Lemon - ½ pieces
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Mix the vinegar with olive oil, crushed garlic, the juice of half a lemon, and leaves stripped from thyme sprigs.
Step 2
Slice the white mushrooms thinly and blanch them in lightly salted water.
Step 3
Trim the ends of the green beans and boil them until tender. This usually takes six to seven minutes if you add the beans to a pot of boiling salted water. Once cooked, cool the beans under cold running water or in a bowl of ice.
Step 4
Finely chop the red onion and mix it with the vinegar dressing. In a large bowl, combine the beans, mushrooms, and onion with the dressing. Season with salt and pepper, taste, and mix again.
