Green Beans in Tomato Sauce with Ginger
Ingredients
- Green Beans - 14.1 oz
- Tomato juice - 23 fl oz
- Onion - 1 piece
- Garlic - 3 cloves
- Grated Ginger - 1 tablespoon
- Lemon Juice - 2 tablespoons
- Cumin - ½ teaspoon
- Cilantro - 1.1 oz
- Parsley - 1.1 oz
Step by Step guide
Step 1
Chop the onion into small pieces.
Step 2
Grate the ginger, crush the cumin seeds, and squeeze the lemon juice.
Step 3
Sauté the onion in vegetable oil for about 5 minutes. Then add the remaining ingredients: garlic, grated ginger, and ground cumin. Sauté for 2–3 minutes.
Step 4
Add the green beans and tomato, as well as a couple of pinches of sugar, salt, and pepper to taste. Simmer for 30–40 minutes or until the beans are tender.
Step 5
After 20 minutes, taste the dish. If it lacks acidity, add lemon juice. Then add the herbs and let it cook for another 15 minutes.
