Description
Green curry is a fragrant and spicy dish that originates from Thailand. It is made with fresh green herbs, coconut milk, and a variety of vegetables and proteins. The dish typically features ingredients like chicken or tofu, along with eggplant, bell peppers, and basil. Serve it hot over steamed jasmine rice for a delightful meal.
Ingredients
- Olive Oil - 1 fl oz
- Poultry - 2 lbs
- Black Bean Paste - 2.5 oz
- Palm Sugar - 8.8 oz
- Coconut Milk - 3 cans
- Fish Oil - 2 spoons
- Thai long bean - 5 pieces
- Krachai - 4 pieces
Step by Step guide
Step 1
Cut the chicken into small pieces and grill them in olive oil on a grill pan until golden brown.
Step 2
Pour the coconut milk into the pot. Heat it until it's nearly boiling, and maintain that temperature until the end of cooking. Add the green curry paste, stir, and let it dissolve.
Step 3
After a couple of minutes, add a quarter of a head of palm sugar. To crush the palm sugar, wrap the head in a towel, hold the ends, and strike the bundle against the floor a few times.
Step 4
After a couple more minutes, add 4 whole roots of galangal to the pot. Chop and add the fried chicken as well. Wait an additional two minutes and then add fish sauce.
Step 5
Cut the round Thai green eggplants in half and place them in a pot. Bring to a boil — and the dish is ready.
