Green Pasta with Cheese
Ingredients
- Leek - 1 piece
- Garlic - 3 cloves
- Broccoli - 14.1 oz
- Butter - 1.4 oz
- Thyme - 0.5 oz
- Wheat Flour - 2 tablespoons
- Milk - 1 qt
- Pasta (corkscrew) - 15.9 oz
- Parmesan Cheese - 1.1 oz
- Cheshire Cheese - 5.3 oz
- Young Spinach "Belaya Dacha" - 3.5 oz
- Chopped almonds - 1.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the oven to 356°F (Gas mark 4).
Step 2
Trim, cut in half, and wash the leek, and peel the garlic, then finely chop along with the broccoli stems, leaving the small florets for later.
Step 3
Place the chopped vegetables in a large skillet over medium heat with the butter, sprinkle with thyme leaves, and cook for 15 minutes or until softened, stirring regularly.
Step 4
Add the flour, then slowly pour in the milk, simmer for 10 minutes or until thickened, stirring regularly.
Step 5
Meanwhile, cook the pasta in a large pot of boiling salted water for 5 minutes, then drain.
Step 6
Grate the parmesan and most of the cheddar cheese and add to the sauce, mixing well. Transfer to a blender, add the spinach, and blend until smooth.
Step 7
Season to taste with sea salt and black pepper, then mix with the pasta and broccoli florets, adding a little milk if necessary.
Step 8
Transfer to a 25x35 cm baking dish, top with the remaining cheddar cheese, and sprinkle with almonds. Bake for 30 minutes or until golden brown and bubbly.
