Ingredients
- Wheat Flour - 14.1 oz
- Chicken Eggs - 3 pieces
- Olive Oil - 2 tablespoons
- Spinach - 7.1 oz
- Mushrooms - 7.1 oz
- Grated Parmesan cheese - 2.5 oz
- Scamorza Cheese - 1.8 oz
- Chopped dill - 1 tablespoon
- Chopped Parsley - 1 tablespoon
- 20% Cream - 7 fl oz
- Smoked Bacon - 3.5 oz
- Salt - to taste
Step by Step guide
Step 1
Finely chop the mushrooms and sauté them in butter (add salt to taste). Once they cool slightly, mix with the grated cheeses.
Step 2
Boil the spinach until tender, squeeze out excess water, and blend in a food processor until it reaches a paste-like consistency.
Step 3
From 400 grams of flour, 3 eggs, 200 grams of spinach, and 2 tablespoons of olive oil, knead the dough.
Step 4
Roll it out and use a teaspoon to place the filling on the dough sheet.
Step 5
Cover with another sheet of dough and carefully press the edges together around the filling, trying to avoid leaving any 'air pockets'.
Step 6
Bring water to a boil for the ravioli and prepare the sauce.
Step 7
Chop the bacon into small pieces, sauté in a pan, pour in the cream, heat through, and add the chopped herbs. The sauce is ready in 3 minutes.
Step 8
Place the ravioli on a plate, add the sauce, and sprinkle with grated Parmesan.
