Green Salad with Barley, Kale, Pistachios, and Mint
Ingredients
- Barley - 13.2 oz
- Kale - 7.1 oz
- Mint Leaves - 1 bunch
- Dill - 1 bunch
- Chives - 1 bunch
- Shallot - 1 head
- Chopped pistachios - 3.5 oz
- Orange Juice - ½ cup
- Grapefruit juice - ⅓ cup
- Avocado oil - 4 tablespoons
- Ground Cinnamon - 1 teaspoon
Step by Step guide
Step 1
Boil the barley in boiling water for 20-25 minutes, until soft, drain in a colander, and spread on a baking sheet to cool.
Step 2
Bring water to a boil in a large pot and add half of the kale.
Step 3
Blanch in boiling water for 1 minute, drain in a colander, and rinse with cold water until cool. Pat dry with paper towels.
Step 4
Place the remaining kale in a food processor and chop.
Step 5
When the barley has cooled to room temperature, mix it with the blanched kale, raw kale, chopped kale, mint, dill, the two types of onion, and chopped pistachios.
Step 6
Mix the dressing ingredients, season well with salt; drizzle the dressing over the salad, toss, and serve.
