  • Kenyan Beans - 1.8 oz
  • Pak Choi - 1.1 oz
  • Quinoa - 2.1 oz
  • Cashews - 0.5 oz
  • Orange Sauce - 0 fl oz
  • Salt - 0.1 oz
  • Dried Raspberries - 0.1 oz
  • Spinach - 0.7 oz
  • Cilantro - 0.2 oz
  • Cream Cheese - 1.1 oz
  • Mirin - 0 fl oz
  • Orange Juice - 3 fl oz
  • Sugar - 0.7 oz
  • Lemon Juice - 0 fl oz
  • Ginger Juice - 0 fl oz
  • Starch - 0.2 oz
  • Sea Salt - 0 oz

Step by Step guide

Step 1

For the orange sauce: mix all the juices, sugar, and 1 gram of salt, bring to a boil, and thicken with starch.

Step 2

For the cream cheese sauce: blend spinach, cilantro, cheese, and mirin sauce in a blender.

Step 3

Cut the mozzarella cheese into cubes (about 1 cm) and marinate with the orange sauce.

Step 4

Cook the quinoa, blanch the broccoli, pak choi, and Kenyan beans.

Step 5

Combine all ingredients, add the cream cheese sauce, mix, and plate, garnishing with nuts and powdered dried raspberries.
