Ingredients
- Mayonnaise - 2.8 oz
- Natural Yogurt - ½ cup
- Water - 2 tablespoons
- Meyer Lemon Juice - 3 tablespoons
- Honey - 1 tablespoon
- Red Curry Powder - 1 teaspoon
- Salt - to taste
- Ground Black Pepper - to taste
- Mixed salad greens - 6 cups
- Dried cranberries with sugar - 1.1 oz
- Orange Bell Peppers - ½ piece
- Large eggs - 1 piece
- Roasted Peanuts - 1 tablespoon
Step by Step guide
Step 1
Boil the egg in boiling water until hard, transfer it to ice water for a while, drain, and peel. Chop finely.
Step 2
In a bowl, mix the yogurt, mayonnaise, lemon juice, water, honey, curry, and a little salt and pepper.
Step 3
Place the salad greens in a large bowl and toss with 2 tablespoons of the dressing. Then add the finely chopped bell pepper, cranberries, egg, and slightly crushed nuts. Toss and serve drizzled with the dressing.
