Description

This is a great light lunch or dinner.

Ingredients

  • Garlic - 2 cloves
  • Apple Cider Vinegar - 3 tablespoons
  • Olive Oil - 3 tablespoons
  • Kalamata olives - 8.8 oz
  • Mixed salad greens - 8 cups
  • Country Bread - 4 pieces
  • Skin-On Chicken Breasts - 28.2 oz

Step by Step guide

Step 1

Preheat the grill and cook the chicken breast until done and golden brown (it's better to use leftover chicken from a barbecue or dark meat). Let it cool and cut into medium pieces.

Step 2

Also, lightly toast the pieces of bread on the grill until golden brown. Let it cool and rub with a clove of garlic. Break into small pieces.

Step 3

Meanwhile, in a bowl, mix the minced 1 clove of garlic, vinegar, olive oil, and finely chopped olives. Add the salad greens and mix well.

Step 4

On a plate, place the salad mixture, top with pieces of chicken and garlic croutons (you can serve the garlic bread whole, placed alongside).
