Ingredients
- 10% cream - 2.1 oz
- Apple Cider Vinegar - 3 tablespoons
- Poppy seed paste - 1½ teaspoons
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Chicken fillet - 2 pieces
- Mixed salad greens - 19.8 oz
- Cantaloupe - 14.1 oz
- Roasted Peanuts - 1.2 oz
- Feta cheese - 1.8 oz
Step by Step guide
Step 1
Preheat the grill or barbecue. Grill the chicken fillets, seasoning with salt and pepper, until cooked through and golden brown. Cool and cut into medium pieces.
Step 2
In a large bowl, mix the sour cream, vinegar, and poppy seeds. Season with salt and pepper. Pour 0.25 cup of the dressing into a small bowl.
Step 3
In the large bowl with the dressing, add the greens and gently toss. Divide onto plates.
Step 4
Top with pieces of chicken, melon, sprinkle with walnuts and feta cheese.
Step 5
Drizzle with the remaining dressing and serve.
