Green Salad with Mushrooms
Ingredients
- Morels - 7.1 oz
- Lollo Rosso - 1.8 oz
- Corn Salad - 1.8 oz
- Garlic - 2 cloves
- Butter - 1.1 oz
- Romaine lettuce - 1.8 oz
- Parmesan Cheese - 1.8 oz
- Celery salt - 2.1 oz
- Parsley - 0.2 oz
- Lemon - ½ piece
- Dry White Wine - 1 fl oz
- Olive Oil - 1 fl oz
- Balsamic Vinegar - 0 fl oz
Step by Step guide
Step 1
Clean the mushrooms, rinse them under running water, and cut them into large pieces.
Step 2
Chop the parsley. Crush the garlic, peel it, and finely chop it.
Step 3
Melt the butter, add the garlic, parsley, and mushrooms, season with salt and pepper, and sauté over high heat for 3 minutes. Pour in 50 ml of dry white wine and simmer for another 1 minute over medium heat. Remove from heat.
Step 4
Chop the celery into thin diagonal strips, and grate the Parmesan cheese on a coarse grater.
Step 5
Squeeze the juice from the lemon, and tear the Lollo Rosso and Frisée leaves into large pieces by hand.
Step 6
Place the celery in a salad bowl, drizzle with vinegar, lemon juice, and olive oil, let it sit for 2 minutes, add half of the Parmesan and the salad leaves, and mix.
Step 7
Top with the warm mushrooms, sprinkle with the remaining Parmesan, and serve.
