Ingredients
- Spinach - 1.8 oz
- Pak choi salad - 1.8 oz
- Romaine lettuce - 1.8 oz
- Eel - 1.8 oz
- Cucumbers - 1.2 oz
- Cauliflower - 1.4 oz
- Chia Seeds - 0.2 oz
- Granola - 0.9 oz
- Avocado - 8.8 oz
- Dill - 0.4 oz
- Scallions - 0.4 oz
- Olive Oil - 2 fl oz
- Vegetable Oil - 1 fl oz
- Shiso Leaves - 2 fl oz
- Meyer Lemon Juice - 1 fl oz
Step by Step guide
Step 1
Peel the avocado, remove the pit, and cut it into medium-sized cubes. Add the chopped dill and green onion, along with 15 ml of lemon juice and 50 ml of olive oil. Mix well and let it marinate for 10-15 minutes.
Step 2
For the dressing, mix shiso sauce with 30 ml of olive oil, vegetable oil, and 10 ml of lemon juice.
Step 3
Thinly slice the cucumbers lengthwise using a mandoline. Also, slice the cabbage into thin strips on the mandoline (set aside a few florets) and place it in ice water.
Step 4
Mix together romaine lettuce, butter lettuce, bok choy, and spinach leaves, cucumber petals, slices of cauliflower, chia seeds, and shiso dressing.
Step 5
Arrange the avocado on plates, add the salad mix on top, sprinkle everything with pieces of granola, and grate the remaining cauliflower over it using a fine grater.
