Ingredients
- Milk - 5 fl oz
- Vegetable Oil - 10 fl oz
- Meyer Lemon Juice - 2 teaspoons
- Mild Chili Spice - 1 teaspoon
- Onion - 1 piece
- Carrot - 1 piece
- Broccoli - 5.3 oz
- Courgette - 10.6 oz
Step by Step guide
Step 1
Blend the milk and oil until thick. Add spices and lemon juice. Blend again. You will get a very thick mayonnaise.
Step 2
Sauté the onion and carrot. The finer you chop them, the quicker they will cook.
Step 3
Boil the broccoli with finely chopped zucchini. If the zucchini is old, remove the skin and seeds beforehand; if it's young, you can chop it as is. The vegetables should cook for 5-7 minutes from the moment the water boils. Drain the water, leaving 1 cup in the pot.
Step 4
Add the sautéed vegetables, season with salt, and puree. Pour in the mayonnaise. Blend thoroughly to achieve a uniform mixture. The more homogeneous the mass, the better.
