Grilled Asparagus and Artichoke Salad
Ingredients
- Shallot - 1 piece
- Meyer Lemon Juice - 3 tablespoons
- Asparagus - 2 lbs
- Olive Oil - 2 tablespoons
- Salt - to taste
- Marinated cherries - 14.1 oz
- Ground Dried Garlic - 1 teaspoon
- Artichokes in Oil - 14.8 oz
Step by Step guide
Step 1
Thinly slice the shallot and transfer it to a bowl. Pour lemon juice over it.
Step 2
Preheat the grill or barbecue.
Step 3
Drizzle the asparagus with 1 tablespoon of olive oil and season with salt, then toss. Place on the grill or barbecue and cook for about 8–10 minutes until tender and lightly browned. Cut into small pieces.
Step 4
In the bowl with the shallot, add the asparagus, remaining olive oil, halved cherry tomatoes, and artichokes. Season with salt and sprinkle with garlic. Drizzle with the oil from the artichokes and gently mix. Serve at room temperature or chill.
