Ingredients
- Butter - 1 tablespoon
- Shallot - 1 head
- Ketchup - 1 cup
- Minced garlic - 1 teaspoon
- Espresso - 2 fl oz
- Brown Sugar - 1 tablespoon
- Mild Chili Spice - 2 teaspoons
- Balsamic Vinegar - 1 tablespoon
- Lamb Neck Fillet - 4 pieces
- Olive Oil - 2 tablespoons
- Coarse Salt - ¾ teaspoon
- Ground Black Pepper - ¾ teaspoon
Step by Step guide
Step 1
In a small saucepan over medium heat, melt the butter. Add the chopped shallot and cook, stirring, for 3 minutes until golden. Add the minced garlic and cook for another minute. Add the ketchup, coffee, vinegar, sugar, and chili. Bring to a boil, reduce the heat, and simmer uncovered for about 10 minutes until the sauce thickens slightly. Transfer to a jar and store in the refrigerator.
Step 2
Lightly brush the meat with olive oil. Season with salt and pepper. Let it rest for 20-30 minutes before grilling.

Preheat the grill.

Lightly oil the grill grate and place the meat on it. Grill for about 8 minutes, turning, for medium doneness. Transfer to plates and let rest for 3-5 minutes. Serve the meat warm with the prepared sauce.
