Grilled Beet Baba Ganoush
Ingredients
- Olive Oil - to taste
- Beets - 31.7 oz
- Lemon Juice - 2 tablespoons
- Tahini - 1 tablespoon
- Garlic - ½ clove
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Sumac - to taste
- Pita bread - to taste
- Aleppo pepper - to taste
Step by Step guide
Step 1
Preheat the grill to medium heat. Lightly oil the grill grate. Grill the beets for 50-60 minutes, turning occasionally, until tender and slightly charred on the skin. You can also roast the beets in the coals after grilling something else.
Step 2
Wait until the coals are completely covered in ash and there are no black spots left. Shake the grill to remove excess ash from the coals, then spread the coals and place them around the beets. Allow to cool slightly.
Step 3
Cut the beets in half, scoop out the flesh with a spoon, and place it in a food processor. Add the lemon juice, tahini, and garlic, and blend until smooth; season with salt and pepper.
Step 4
Drizzle the baba ganoush with oil. Serve with flatbreads or pita.
