Description
The feature of this recipe is the cooking time. Thanks to the high temperature and the pan with water, the chicken releases fat but does not become dry (nor does it become watery). Thus, we get tender meat with a salty and peppery skin.

- Salt - to taste
- Poultry - 1 piece
- Red Long Chili Peppers - to taste
- Chili Flakes - to taste
- Rosemary - 1 bunch
Step by Step guide
Step 1
Rub the cleaned chicken with a mixture of salt and peppers and let it sit for a few minutes while the oven heats up. Preheat the oven to grill mode without ventilation at a temperature of 482°F (250°C).
Step 2
Skewer the chicken and place it in the oven. On the lower rack, place a baking tray and fill it with water to 70%-80%. Lay sprigs of rosemary on the sides of the tray.
Step 3
Keep the chicken in the oven for at least three hours (you can tell it is done by the characteristic color of the roasted chicken), occasionally replacing the rosemary sprigs with fresh ones.
