Ingredients
- Skin-On Chicken Breasts - 2 pieces
- Salt - to taste
- Vegetable Oil - to taste
- White Pepper (whole) - to taste
- Udon Noodles - 8.8 oz
- Baby Bok Choy - 2 pieces
- Chicken Broth - 1 qt
- Bamboo shoots - 12 pieces
- Scallions - 4 stalks
Step by Step guide
Step 1
Preheat the grill. Lightly rub the chicken breasts with salt and pepper and grill for 4 minutes until cooked through. Let cool for 5 minutes, then slice diagonally into strips.
Step 2
Cook the noodles in boiling water until tender. Drain, rinse under cold water, and divide into 2 bowls.
Step 3
Bring the broth to a boil in a pot. Place the sliced bok choy on top of the rice and pour the broth over it. Then add the pieces of chicken, bamboo shoots, and sliced green onions.
