Grilled Chicken with Oranges, Sesame, and Vegetables
Ingredients
- Lemon - 1 piece
- Oranges - 3 pieces
- Champagne Vinegar - 1 tablespoon
- Ground Black Pepper - ¼ teaspoon
- Sesame Oil - 2 tablespoons
- Dijon Mustard - 2 teaspoons
- Chicken fillet - 3 pieces
- Asparagus - 2 lbs
- Young zucchini - 6 pieces
- Olive Oil - 1 teaspoon
- Salt - 1½ teaspoons
- Toasted Cumin Seeds - 2 teaspoons
Step by Step guide
Step 1
Cut 1 orange into wedges, leaving the peel on. Peel 1 orange. Squeeze the juice from 2 oranges. Transfer the zest and juice to a bowl. Add lemon juice, vinegar, pepper, and mustard, and mix. Slowly whisk in the sesame oil.
Step 2
Place the chicken breasts on a cutting board and pound them to a thickness of 1 cm. Transfer to a bowl and pour half of the marinade over them. Mix, cover, and refrigerate for 1–2 hours.
Step 3
Preheat the grill or barbecue.
Step 4
Drizzle the asparagus and chopped zucchini with olive oil and season with salt. Place on the grill along with the orange wedges and grill until tender.
Step 5
Remove the chicken from the marinade and season with salt. Place on the grill and cook, turning occasionally, until done and golden brown.
Step 6
Transfer the chicken to a serving platter, arrange the vegetables and oranges alongside. Sprinkle with sesame seeds and serve with the remaining vinaigrette.
