Grilled Chicken with Pineapple
Ingredients
- Soy Sauce - ¼ cup
- Medium-dry sherry - 0.3 cups
- Brown Sugar - 2 tablespoons
- Canned Pineapple Chunks - 19.4 oz
- Chicken fillet - 4 pieces
- Corn Starch - 1 teaspoon
- Butter - 1 tablespoon
Step by Step guide
Step 1
In a large bowl, mix together sherry, soy sauce, brown sugar, and 0.3 cups of pineapple juice. Add the pineapple rings and chicken fillets, and mix well. Refrigerate for 15 minutes.

Meanwhile, preheat the grill.

Place the chicken and pineapple rings on a greased grill and cook for about 4–5 minutes on each side until done.

In a saucepan, combine the remaining marinade and cornstarch. Bring to a boil and cook until slightly thickened, about 2–4 minutes. Remove from heat and stir in the butter.

Arrange the chicken and pineapples on a plate and drizzle with the sauce.
