Ingredients
- Olive Oil - 1 tablespoon
- Sweet Corn Sticks - 2 pieces
- Tomatoes - 10.6 oz
- Orange Bell Peppers - 1 piece
- Red Wine Vinegar - 2 tablespoons
- Coarse Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the grill. Brush the grill grate with oil.
Step 2
Place the corn cobs on the grill and cook, turning occasionally, for 8–10 minutes until tender and browned. Transfer to a plate and let cool slightly. Then, using a sharp knife, cut the kernels off and transfer to a bowl.
Step 3
Add diced tomatoes, diced bell pepper, finely chopped green onion, vinegar, and oil. Season with salt and pepper and mix well.
