Ingredients
- Dorado - 4 pieces
- Vegetable Oil - 2 fl oz
- Lemon - 2.1 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Fresh Mint - 4 sprigs
- Herbs - to taste
- Thyme - to taste
- Water - 25 fl oz
- Chicken bones - 8.8 oz
- Carrot - 5.3 oz
- Butter - 2.1 oz
- Marinated cherries - 4.2 oz
- Onion - 6 oz
Step by Step guide
Step 1
Clean the fish by removing the scales and guts, then rinse it.
Step 2
Stuff the bodies with lemon, thyme, and mint.
Step 3
Rub with salt and sprinkle with pepper.
Step 4
Prepare the fish broth. Grate the carrot and slice 150 grams of onion into thin strips. Sauté in a dry skillet without oil.
Step 5
Add the fish bones and sautéed vegetables to the boiling water. Cook for 40 minutes over medium heat. The broth is ready.
Step 6
Grill the fish with the addition of vegetable oil.
Step 7
Prepare the sauce. Sauté 20 grams of onion in vegetable oil. Add chopped cherry tomatoes. Sauté well, then add 2 tablespoons of fish stock, salt, pepper, a sprig of thyme, and simmer for 5 minutes.
Step 8
At the very end, add the butter.
Step 9
Place the fish on a plate and drizzle with sauce.
Step 10
Garnish with lemon and herbs.
