Ingredients
- Eggplants - 24.7 oz
- Yogurt powder - 7 fl oz
- Parsley - 1.4 oz
- Dill - 1.4 oz
- Tomatoes - 1.8 oz
- Cucumbers - 1.8 oz
- Shallot - 1 piece
- Salt - to taste
- Ground Black Pepper - to taste
- Olive Oil - 0 fl oz
Step by Step guide
Step 1
Preheat the oven to 392°F. Wash the eggplants and pierce them with a fork in twelve places. Place them in the oven and bake for about 30 minutes until they become soft (they should shrivel slightly and turn brown). Remove from the oven and let cool.
Step 2
Preheat the grill. Cut the eggplants diagonally into thick slices, about 2 cm thick.
Step 3
Season the eggplant slices with salt, pepper, and drizzle with oil. Grill for 5 minutes on each side. Arrange on a plate and sprinkle with chopped parsley and dill.
Step 4
Mix the yogurt, vegetables, shallot, and herbs in a large bowl. Use the resulting sauce to dress the eggplants.
