Description
The main target for this marinade is any type of red fish, from pink salmon to sockeye and from coho to char. The soy sauce, with the support of mustard and lemon, helps to mask the distinctive taste that particularly picky eaters refer to as the taste of fish oil. This is true even though the fish isn't actually baked in the marinade, but merely soaked in it for a minimal amount of time. If you like, you can serve the grilled fish with green onion tops that have also been lightly charred over the fire. This adds a touch of Chinese flair to the dish.
Ingredients
- Soy Sauce - 5 teaspoons
- Dijon Mustard - 1 tablespoon
- Lemon - 1 piece
- Cilantro - 1 bunch
- Honey - 3 spoons
- Ginger - 1 piece
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Mix the soy sauce and lemon juice.
Step 2
Add honey (if it's too thick, slightly melt it by placing the bowl near the fire or in the microwave), mustard, and mix until well combined, then add thinly sliced ginger and chopped cilantro.
Step 3
Season with pepper to taste.
Step 4
Leave the fish in the marinade for 20 minutes at room temperature or refrigerate it for 1–2 hours before grilling.
