Grilled leafy green salad with pita croutons

Ingredients

  • Green lettuce - 24.7 oz
  • Olive Oil - 8 tablespoons
  • Coarse Salt - to taste
  • Ground Black Pepper - to taste
  • Pita bread - 2 pieces
  • White vinegar - 3 tablespoons
  • Chopped Tarragon Leaves - 0.7 oz
  • Shallot - 1 head
  • Dijon Mustard - 1 teaspoon
  • Cherry Tomatoes - 7.1 oz
  • Parsley leaves - 2.5 oz
  • Ricotta cheese - 2.1 oz

Step by Step guide

Step 1

Preheat the grill to medium heat. Lightly oil the grill grate. Toss the lettuce with 2 tablespoons of olive oil in a large bowl; season with salt and pepper. Brush the pita with 2 tablespoons of olive oil.

Step 2

Grill the lettuce (turning once) for about 2 minutes on each side until slightly charred on the outside but still firm inside; let cool, then tear into leaves. Meanwhile, grill the pita for about 1 minute on each side. Let cool, then break into small pieces.

Step 3

In a large bowl, mix the vinegar, tarragon, shallot, mustard, and the remaining 2 tablespoons of oil; season with salt and pepper. Add the lettuce, tomatoes, parsley, cheese, and pita; toss to combine.
