Description
This recipe is perfect for a family picnic when you want to quickly fire up the grill without spending too much time preparing marinades and sauces. You can prepare a simple sauce base in advance and bring it in a container from home. It's straightforward yet impressive: the soy sauce is thickened with cornstarch to a glossy glaze, and the addition of ginger, hot pepper, sugar, and lime elevates it to a flavor crescendo. While this bold combination of spices might be too much for a milder fish, the assertive taste of mackerel actually benefits from it, gaining an interesting Asian twist.
