Description

The grilled mackerel with tomato chimichurri combines all the flavors of summer: sweet tomatoes that taste their best in season, the freshness of parsley, and the aroma of oregano. The scent of live flames makes any dish taste better. Chimichurri sauce originated in Latin America; it's a unique answer to Italian pesto: the same principle of using the freshest ingredients, the same fragrant mix of various spices, herbs, and vegetables, but the ingredients, especially in summer, are much more budget-friendly. This easy-to-make sauce is the best companion for anything grilled over an open flame. A little good wine vinegar is a must in chimichurri, and this subtle, balanced tang complements the grilled mackerel beautifully.

Ingredients

  • Mackerel - 4 pieces
  • Lemon - 1 piece
  • Olive Oil - 4 spoons
  • Garlic - 6 cloves
  • Tomatoes - 2 pieces
  • Spanish onions - 1 head
  • Parsley - 0.7 oz
  • Dried Rosemary - 1 tablespoon
  • Mild Chili Spice - 1 tablespoon
  • Paprika - 1 tablespoon
  • Ground Cumin - 1 tablespoon
  • Red Wine Vinegar - 4 spoons
  • Salt - to taste
  • Ground Black Pepper - to taste

Trim the heads and tails off the fish, then cut each fish into two fillets.

Rinse the fillet and remove any large bones.
