Ingredients
- Boneless Lamb Leg - 4 lbs
- Ketchup - 1 cup
- Worcestershire Sauce - ¼ cup
- TABASCO® - to taste
- Mild Chili Spice - 1 teaspoon
- Water - 1 cup
- Brown Sugar - ¼ cup
- Salt - 1 teaspoon
- Celery salt - 1 teaspoon

Step 1
Trim excess fat from the meat and cut it so that the piece becomes evenly flat.
Step 2
In a saucepan, mix ketchup, Worcestershire sauce, a few drops of TABASCO, chili powder, water, sugar, and both salts. Bring to a simmer over medium heat, but do not let it boil. Transfer to a bowl and add the meat. Stir, cover, let cool, and refrigerate overnight.

Preheat the grill.

Place the meat on the grill and cook, basting with the marinade every 10-15 minutes and turning, for about 50 minutes. Do not overcook; the top should be a golden crispy crust, but the meat should remain slightly pink inside.
