- Octopus - 4 lbs
- Rosé Dry Wine - 12 fl oz
- Soy Sauce - 2 tablespoons
- Balsamic Vinegar - 3 tablespoons
- Sweet Chili Sauce - 4 fl oz
- Fresh basil leaves - 1.8 oz
Step by Step guide
Step 1
Using a sharp knife, clean the octopus of its insides and guts, and cut out the eyes. Thoroughly clean the head. Rinse the octopus under cold running water.
Step 2
Place the octopus in a pot, pour in the wine and balsamic vinegar. Bring to a boil, reduce the heat, and simmer for 15 minutes until tender. Drain and transfer to a bowl. Add the soy and chili sauces.
Step 3
Preheat the grill and cook the octopus until slightly charred. Serve on a bed of basil leaves.
