Grilled Pepper Salad with Lentils
Ingredients
- Cilantro - 0.7 oz
- Orange Bell Peppers - 1 piece

- Onion - 1 head
- Lentils - 1½ cups
- Bay leaf - 1 piece
- Yellow Cherry Tomatoes - 4.2 oz
- Scallions - 1.2 oz
- Lime Juice - 0.3 cups
- Pitted olives - 1.8 oz
- Olive Oil - 1 tablespoon
- Ground fennel seeds - 1 teaspoon
Step by Step guide
Step 1
Preheat the grill or barbecue.
Step 2
Clean the peppers and cut them into quarters. Drizzle with vegetable oil and place on the grill, skin side down. Grill for about 12 minutes until the skin starts to char. Season with salt and pepper. Transfer to a plastic bag and let sit for 15 minutes. Remove the skin and cut into small pieces. Transfer to a bowl.
Step 3
Bring a pot of salted water to a boil. Add the lentils, halved onion, and bay leaf. Bring to a boil, cover, and simmer on low heat for about 20 minutes until tender. Drain and remove the onion and bay leaf. Add the lentils to the peppers and mix well. Season with salt and pepper.
Step 4
Add the chopped tomatoes, chopped green onions, cilantro, lime juice, chopped olives, olive oil, and fennel. Mix well.
